Roasted Peppers

Ingredients

Choose a pepper type:

Bell Peppers (red + yellow are my favorites)

Anaheim Pepper (used for canned green chiles)

Poblanos

Fresnos

Jalapenos

Hatch


For roasting:

Drizzle of oil (peanut, olive, or vegetable)

Sprinkle of Salt


Seasoning ideas:

Salt to taste

Vinegar

Garlic (crushed or sliced)

Dried herbs (oregano, rosemary, etc)

Flavored oils (olive, chile, sesame, etc.)

Directions

Preheat the oven to 425 F (218 C). Chop the peppers in half then remove the seeds and membrane.

Line a baking sheet with parchment paper. Place the halved peppers down on the sheet along with a little drizzle of oil and a sprinkle of salt. Roast in the oven until completely soft and the skin has slightly blackened, about 15 minutes.

Remove the roasted peppers from the oven and place them in a bowl. Cover with plastic wrap and let steam for 15 minutes.

Remove the outer skin. Slice or chop into the desired shape.

Taste them! Add a sprinkle of salt, vinegar, garlic, or herbs as you see fit. Mix in the seasonings and store in an airtight container. You can fill the container partway with oil if you would like, but I prefer not to.

Use as a topping or blend into sauces, hummus, etc.
